• Fried Sage (Tuscany, Italy): Ingredients: 20 sprigs of sage, sunflower oil, 2 eggs, 1/2 cup of flour.
    Preparation: Wash 20 or 30 sprigs of saage, pat with paper towels, and allow to dry completely. Heat 1-2 cm of sunflower or peanut oil until it is very hot. Dip sprigs in batter and drop them in hot oil for about 2 min, until crisp. Drain on paper towels. A splendid garnish for lamb, pork or any meat.
    To prepare the batter: beat 2 eggs with 1/2 cup of flour. Mix well.
